Territory Day’s A Cracker
IS THERE ANYTHING MORE TERRITORIAN than celebrating ‘Cracker Day’ by tucking into some roo snags as you savour the sights of Mindil Beach?
The Territory is set to explode with events and fireworks to celebrate 41 years of self-governance in the NT on Mon 1 Jul. It’s the only time and place Aussies can set off fireworks – and boy, do we let loose. There’s also free entertainment for the whole family to celebrate.
Darwinites can party through the decades with Hot Dub Time Machine, Aussie music legend Tex Perkins, and local acts including Stevie Jean and Phoebe Wear for the main gig at Mindil Beach.
Down the track, Katherine residents are in for a treat with Electric Fields, Birdz, Serina Pech and Cockatoo Dancers. For those farther south, The Barkly Big Deal Band, Warren H. Williams and Barkly’s Best Musos are on the bill in Tennant Creek.
If you’re looking for a good feed, the Territory Day Starbeque at Mindil Beach Casino Resort will be a tad fancier than your normal backyard barbie. Head chef Athol Wark shared the mouth-watering menu for the celebratory affair, and it sounds like a cracker of a gourmet buffet.
“We have a great menu for the occasion and we’ll be keeping with the Territory theme and keeping it tropical,” he says.
“There’s everything from prawns with a mango cocktail sauce and lemon wedges, green muscles with chilli lemongrass and coriander dressing, native spice hummus and salads with lemon myrtle dressing.”
But it wouldn’t be a Starbeque without a selection from the grill… Dig into grilled pork ribs with smoky bourbon barbecue sauce, threadfin salmon with teriyaki glaze, slow-cooked beef brisket with a mustard crust, lamb loin chops, plus some kangaroo snag with a bush tomato relish.
“We’re trying to have a barbecue that’s not just the same chops, beef and sausages,” Wark says.
“We’re making it a bit more elab-orate and creative, and enhancing the flavours of the environment.”
